Finding good-quality black or white "piper nigrum" peppers is not easy in Madagascar, which specializes in green pepper (harvested when the grains are immature).
These grains are harvested in the region of Tamatave, allowed to ripen on the vine, then dried and sorted in the sun. The resulting small, black and wrinkled grains are extremely aromatic and very resinous, with warm and gourmet notes of brioche, pine nuts and marshmallow, as well as fresh notes of acid green fruit.
For maximum flavor, grind or crush peppercorns just before using.
